What to ask before you enroll

1. Is there funding attached to this hire, and does the paperwork have to be in place BEFORE the employee's first day? For on-the-job training programs it usually does, and there is no way to fix it after the fact.
2. What are the eligibility requirements for the employee, and who determines them?
3. What is my reporting obligation — timesheets, evaluations, retention checkpoints — and for how long?
4. Are candidates screened before referral, and what does the screening cover?
5. Is there a retention expectation attached to the funding, and what happens if the person leaves early?
6. Does the program cover certification costs like ServSafe, and does the certificate stay with the employee?
7. Who is my ongoing point of contact once the placement is made?

• Cuyahoga Community College — Hospitality Management Center

  Tri-C’s culinary and hospitality school, downtown on Euclid Avenue. Credentials run from a four-month Culinarian/Cook short-term certificate through nine-month certificates of proficiency in Professional Culinarian/Cook, Personal Chef and Baking/Pastry Arts, up to an American Culinary Federation-accredited Culinary Arts associate degree. Students run a working restaurant, Alere, as part of the program.

  The largest culinary pipeline in the region, and the four-month certificate turns over fast enough to be worth a standing relationship rather than a call when you are short. Tri-C also runs a free public Career Marketplace at tri-c.lightcastcc.com with live regional job postings and wage data by occupation — useful for benchmarking what you are offering a baker or a chef against what is actually being advertised within 25 miles. • EDWINS Leadership & Restaurant Institute

  Free six-month culinary and hospitality training for men and women reentering society after incarceration, run from a fine-dining French restaurant on Shaker Square. Students study in the classroom by day and work the restaurant by night, covering both back and front of house.

  Serves: Cuyahoga, Lake, Lorain, Medina, Summit, Portage, Geauga counties

  Graduates roughly 100 students a year and reports a 95 percent employment rate, with more than 50 Cleveland-area restaurants having hired from it. Ask for the Director of Community Outreach about hiring, and ask what wraparound support a graduate still has — housing, transportation and legal help are part of the model and they affect whether a placement sticks.

• Hospitality Institute of Ohio

  Nonprofit workforce arm connected to the Ohio Restaurant & Hospitality Alliance, working to build and train Ohio's hospitality workforce. Runs ProStart career and leadership training, workforce placement initiatives, a career and technical student organization, and the Hospitality Reserve employee assistance fund.

• International Culinary Arts & Sciences Institute (ICASI)

  The professional culinary campus of the Loretta Paganini School of Cooking, in Chesterland. Offers culinary arts and baking and pastry arts programs, and delivers the culinary coursework for Lakeland Community College’s Culinary Arts associate degree while Lakeland handles the general education side.

  Serves: Geauga, Lake, Cuyahoga, Portage counties

  The only professional culinary program based in Geauga County, which is otherwise the thinnest county in the region for both training and food-safety certification. The affiliated Loretta Paganini School of Cooking next door at 8613 Mayfield Rd (440-729-1110) runs recreational and technique classes rather than professional training — useful to know which one you are calling.

• Kent State University — Hospitality and Event Management

  Four-year Bachelor of Science in Hospitality and Event Management, accredited by the Accreditation Commission for Programs in Hospitality Administration, with concentrations covering hospitality, event management and business management. Kent State Ashtabula offers the degree plus standalone certificates.

  Services: Hospitality management degree · Event management degree · Certificates

  Serves: Portage, Summit, Cuyahoga counties

  A management pipeline rather than a line-cook one — the place to look for a general manager or events lead rather than a cook. Worth asking about internship placements, which are how most of these relationships actually start.

  Culinary arts technology and hotel and lodging management programs, delivered in partnership with the International Culinary Arts & Sciences Institute as an Associate of Technical Studies with hands-on culinary or pastry training.

  The east-side option, and the practical one for Lake and Geauga County operators — the two counties with the thinnest local training coverage otherwise.

  One-year certificate and an associate degree in culinary arts, offered as a major within the Hospitality & Tourism Management program. Coursework covers commercial kitchen management alongside catering and institutional foodservice.

  The closest full culinary program to the western suburbs and Lorain County, which matters if you are hiring somewhere a commute into downtown Cleveland is the obstacle.

• Polaris Career Center — Adult Education

  Adult career training in Middleburg Heights, including a Baking & Pastry Arts program and culinary training, with a student-run bakery and restaurant attached. Polaris is also an ODH-approved provider for both Ohio food protection certifications.

  Worth one call for two things at once: a baking and pastry pipeline, and food protection certification for staff you already have. Polaris reports that 80 percent of adult job and career training students are employed after graduating — their figure, worth asking them to break down by program.

  Cleveland nonprofit running employment and workforce development alongside meals, clothing, and housing programs. Works with people re-entering the workforce and can connect employers with candidates.

  Serves: Cuyahoga County

  Serves people regardless of religious affiliation. Employers hiring candidates re-entering the workforce should ask what wraparound support continues after placement — transportation and stability support are what make these placements stick.
