Trash and recycling hauling plus food waste composting — the line item nobody reviews and everybody overpays for.
Separate from grease and used cooking oil, which have their own vendors. Waste contracts are among the most common sources of quiet overcharging in foodservice: multi-year auto-renewals, fuel and environmental surcharges, and containers sized for a business you no longer are. Food waste diversion is also increasingly available here, and can reduce both cost and volume.
What to ask before you sign
Take this into the call. No vendor gets to edit this list.
- What is the all-in weekly or monthly cost including fuel, environmental, and administrative surcharges? Ask for one number, not a base rate.
- What is the contract term, the auto-renewal window, and the written notice required to cancel? Multi-year auto-renewals are the norm — read before signing.
- Is my container correctly sized and my pickup frequency right for my actual volume? Over-sized and over-frequent is the default and it is billed to you.
- Can I add food waste composting, what does it require of my staff, and does diverting food waste let me reduce trash service?
- Are there caps on annual price increases, or can the rate move at will?
- What happens if a container is contaminated or overloaded — what is the surcharge?
- Who is responsible for the enclosure area staying clean? Inspectors look at your dumpster area.
- Clear liners or dark? Clear lets a manager see what is actually going into the bin — portioning waste, product going out the back door, recyclables in the trash — and dark hides all three. Some recycling programs require clear bags anyway. It is a small line item that answers a question you cannot otherwise audit.
