Two reasons to use a service rather than a washing machine. The commercial one: linen contracts are among the most common sources of surprise cost in an independent kitchen — minimums, replacement charges, surcharges and long auto-renewal terms. The regulatory one: Ohio requires linens to be mechanically washed, requires cloth napkins laundered between each use and wet wiping cloths laundered daily, requires soiled linens held in clean nonabsorbent receptacles or washable bags, and restricts on-premises laundry facilities to items used in the operation. Sending aprons home with staff satisfies none of that in any way you could show an inspector.

What to ask before you sign

  1. What is the weekly minimum charge, and does it apply during slow weeks or a temporary closure?
  2. What is the contract term, the auto-renewal window, and the notice period to cancel in writing?
  3. How are lost or damaged items priced, and who counts them?
  4. Are "environmental," "energy," or "service" surcharges included in the quoted price? Ask for an all-in per-week number.
  5. Can I start with a trial period before signing a multi-year term?
  6. What happens to my pricing at renewal — is there a cap on annual increases?
