Kitchen deep cleaning & janitorial

Scheduled deep cleaning of the things a closing shift never gets to — under and behind the line, walk-in floors, drains, and the front of house.

Distinct from hood and exhaust cleaning, which is a fire-code service on its own schedule, and from your own nightly close. This is the recurring contract that keeps floors, drains, walls and equipment exteriors from slowly failing an inspection. Most findings that read as neglect are really findings that nobody owned a task.

What to ask before you hire

Take this into the call. No vendor gets to edit this list.

  1. What exactly is on the scope sheet, item by item, and what is explicitly excluded? "Deep clean" means different things to different companies and the gap is where disputes live.
  2. Do you move equipment to clean under and behind it, or clean only what is reachable? This is the single biggest difference between quotes that look similar.
  3. Who cleans the floor drains, and how often? Drains are the most common source of both odor and fly problems, and they are frequently on nobody’s list.
  4. Are your crews trained not to use the food prep sinks or handwashing sinks for their buckets? Ask how they are supervised on it.
  5. What chemicals do you bring, are they food-safe for the surfaces involved, and will you leave safety data sheets on site? Chemicals brought in by a contractor still have to be labeled and stored to code once they are in the building.
  6. Do you work after close, and what access and alarm arrangements does that need?
  7. Are you insured, and can you send a certificate naming my business?
  8. What is the notice period to cancel, and does the contract auto-renew?
